Chia Pudding 2 Ways

These chia puddings are not only tasty and easy to prepare, but also provide a good amount of nutrients. Chia seeds are a good source of minerals including calcium, potassium and magnesium and high in quality protein.

Ingredients:

1. Mango Yogurt Chia Pudding

Chia Pudding
• 1 Cup (240g) Nonfat (or Low fat) Plain Greek Yogurt
• 1 Cup (240g) Nonfat (Skimmed) Milk
• 1/4 Tsp Vanilla Extract
• 1/4 Cup (40g) Chia Seeds

Mango Puree
• 2 Large Very Ripe Mangoes
• 1 Tbsp Honey

Garnish
• ½ Fresh Ripe Mango, sliced
• 1 Tbsp Coconut Flakes
• 1 Tbsp Chia Seeds
• A handful Raspberry

2. Strawberry Coconut Chia Pudding

For the Pink Layers
• 2 Cups (400g) Fresh Strawberries
• 1/2 Cup (120g) Plain Coconut Yogurt
• 1/2 Tsp Vanilla Extract

For the Chia Pudding Layer
• 2 Tbsp Plain Coconut Yogurt
• 1 Cup (240g) Milk
• 1/2 Tsp Vanilla Extract
• 1/4 Cup (40g) Chia Seeds
• 1 Tbsp Honey

Garnish
• A handful Fresh Strawberries
• A handful Mint Leaves

Preparations:

1. In a bowl, stir together the chia seed ingredients.
2. Cover and place in the fridge for 4 hours or more.
3. Peel a mango with a water glass.
4. Remove strawberry stems with a straw.
5. Puree the mangoes and honey.
6. Puree the strawberries, coconut yogurt and vanilla extract.
7. Assemble mango puree with chia seed pudding, serve with your favorite toppings.
8. Assemble pink layers with chia seed pudding, serve with your favorite toppings.
9. Enjoy!
